cranberry-orange-spelt muffins


Today Christmas came... 11 months early! I remembered about the cranberries I bought from St. Lawrence Market way back in October and hidden away at the back of my freezer. I went searching for some cranberry muffin recipes, and ended up combining a few - this one is mostly based on a recipe from the whole foods website for blueberry spelt muffins. It's more of a dessert muffin; there's a lot of sugar in them. Hopefully that's counteracted by the spelt flour - I've been trying to cut down on wheat lately... which can be difficult, especially when your dancing five hours every day. Anyway, here it is!

muffins:

4 tbsp softened butter
2/3 cup white sugar
1/3 cup 3% yogurt
2 large eggs
1/2 orange juice
1 tsp vanilla extract
1 tsp orange zest
2 cups spelt flour
2 tsp baking powder
1/4 tsp salt
2 cups frozen cranberries

strudel:

1/8 cup rolled oats
1/8 cup oat bran
1/8 cup brown sugar
1 tbsp canola oil (or butter)

Preheat over to 375. Cream butter and sugar together. Stir in yogurt, beaten eggs, orange juice, vanilla and orange zest. In another bowl, combine spelt flour, baking powder and salt. Add wet ingredients to dry, and stir until just combined. Stir in cranberries. Spoon into muffin cups (my batter made 9 jumbo muffins). For the strudel, combine all four ingredients. Sprinkle over each muffin. Bake for about 25 minutes, until golden brown and a fork comes out clean.

blogging!

ok, here it goes. into the wild world of blogging. i recently made a zine for christmas - a collection of my favorite recipes from the last year. now's my chance to make a more polished version (and not have to print it off at ridiculous prices for color photocopies).
